After going to over fifteen different doctors and specialists for over a year and a half I still had no answer to why I was experiencing severe fatigue, muscle pain, numbness and tingling and a barrage of other frustrating and at times terrifying symptoms. I was diagnosed with Fibromyalgia, Chronic Fatigue Syndrome, Epstein Barr Virus, Depression and Anxiety. Those are labels but they are not explanations as to where this came from or how to put the breaks on the rapidly increasing severity of them all. At the age of 26, my health was quickly declining. Thought I would just let you know how I am doing. My visits with you really did help me a lot and I thank you very much again. I am finding that what I eat and drink totally affects how I feel and I can pretty much control my health by controling my food intake. Staying away from gluten is not so daunting anymore. I have learned how to live without it; how to go out to restaurants and order gf food. There is a lot of information and support for celiacs and lots of restaurants are very accommodating here. I cook a lot and use lots of non gluten grains (make my own muffins, pizza desserts), but find I tend to do better with a minimal use of grains just like you recommended.
I really am enjoying taking a recipe and converting it to gf and people tell me that it is good!! (Although I admit to a number of disasters as well.) I have greatly reduced my intake of coffee which is really tough for me and only have decaf when I do and I can feel the effects of chocolate as well. I ‘think’ and feel that my intestine is definitely healing. I think that the diet for sure has been the biggest help…sticking to the blood type O diet and eating in a way that you described to me.
